The bar offers an impressive and ever-changing selection of champagnes, typically working with 25 small-scale growers to present around 130 distinct varieties. This dynamic curation allows guests to discover the craftsmanship of independent producers, far removed from the well-trodden paths of big-brand champagne.

Princess is on a mission to broaden the horizons of her guests, many of whom associate champagne with major brands. “Most people don’t know much about champagne,” she explains. “What they know are the names they see in supermarkets or on TV, but there’s so much more to explore.”

For those accustomed to well-known names like Bollinger, Princess finds it easy to offer comparable alternatives. “It’s about understanding what they enjoy and showing them something similar — and sometimes at a better price,” she says.

“Champagne is perfect to start an evening, but many styles pair wonderfully with meals,” Princess says.

From lighter options to more complex, oak-aged varieties, her selection caters to a diverse range of tastes. Prices start at €13 per glass, demonstrating that excellent champagne doesn’t have to break the bank.

Princess takes particular pride in highlighting innovative small-scale producers. Among her favourites is a 100% Pinot Noir champagne from a visionary winemaker she likens to Jacques Selosse, the legendary champagne innovator. This producer combines traditional methods with modern, natural practices, creating champagnes that are both exceptional and unique.

“He works in a sustainable way, but he doesn’t chase certifications,” Princess notes. “For him, it’s about the passion for the craft, not bureaucracy.”

The result is a range of champagnes that bridge the gap between tradition and modernity, offering guests something truly special.
